Egg Curry

Egg Curry – recipe adapted from Madhur Jaffrey – serves 3 It’s been quite a while since I posted a recipe. It’s been all about cookies that is, until now. I adapted this recipe from one of my favorite cook book authors Madhur Jafffrey. The original recipe calls for lamb meatballs (or “koftas”) to be simmered in this tomato-yogurt curry. But, since my local grocer was out of lamb, I used eggs instead. The gravy is made with caramelized onions, flavorful spices, yogurt, and tomatoes. The next time around I am going to try cooking chicken or goat meat in this sauce. For vegetarians, adding new potatoes would be a great option! Ingredients: 8 large eggs- boiled and peeled . . . Scrambled Eggs

Scrambled Eggs- Serves 1 At my house, we all prefer to eat cereal on weekday mornings but weekends is when we love to relax and begin the day with a big and inviting breakfast. On weekends, I usually make scrambled eggs, bacon or sausage, toast served with a glass of freshly squeezed juice (orange, grapefruit or celery). I like to add fresh cilantro, a dash of green chilly (for some heat), milk, salt, pepper and melted butter. I know many people who actually like to add butter to the eggs directly (I like to melt it first)on the pan, and honestly there is no right or wrong way of doing it but this is how my family enjoys it! Chocolate Pudding

Chocolate Pudding- Recipe by Ina Garten, serves 5 Just about everything home-made is not only more reasonable but also tastes fresher and better. Don’t get me wrong, I am all for simplifying things and taking short cuts but when the recipe looks easy and do-able, I usually opt for making it myself. Last week, I made chocolate pudding for a few of our friends. The pudding was lusciously smooth, rich and decadent! I don’t think now, I can go back to eating the instant chocolate pudding out of the box. This home made version of chocolate pudding was an instant hit with all! Ingredients: 6 extra-large egg yolks 1/2 cup sugar 1/4 cup cornstarch 3 tablespoons cocoa powder ( I . . . CLICK TO READ MORE

Flan- Serves 8 Compulsivefoodie turned ONE yesterday and I want to thank you all for your support, love and encouragement. It’s been an incredible learning experience for me and I am still learning so much everyday from my creative and talented blogger friends. I want to celebrate my blog’s first anniversary by sharing one of my favorite dessert recipes. “Flan” or caramel custard is a very popular Spanish dessert. I adapted this recipe from “Life of the Party” (Junior League of Tampa Culinary Collection). The result is a positively divine silky, smooth custard flavored with vanilla. Enjoy!
