Panko-crusted salmon

Panko-Crusted Salmon- recipe by Ina Garten. Serves 4 This is one of the best ways of cooking salmon, to first sear the skin on a pan and then place it in a hot oven which helps the salmon cook perfectly. The fish is seasoned with some salt, pepper and dijon mustard and then panko is added on top to give it a light crust. Panko are Japanese bread crumbs which are light and flaky and used  as a coating to fry.  This dish is super quick to prepare.We love to eat light for dinner so usually along with this I serve some steamed vegetables (out of a bag). Minced Chicken

Minced Chicken (kheema): Serves 4 to 5 Was craving this for a long time and made it last night for dinner along with “Boondi Dahi” (savory chickpea flour balls in sweetened yogurt), Okra and pulao. The same recipe can be used to make turkey mince or even goat (mutton) mince. Minced chicken is the Indian-version of what many popular restaurants serve as the filling in lettuce wraps. Mince (“kheema” in Hindi) was made in my mother’s house every Sunday for lunch. We also make a dry version of this to stuff into a potato pattice. Paneer Makhanwala

“Makhanwala” is a tangy, tomato-based gravy cooked with butter and cream. You can add chicken, vegetables or paneer to this rich and creamy sauce depending upon your preference. However, what’s great about this particular recipe is that it has no butter or cream, making it a healthier option than the traditional recipe without compromising on flavor. It includes loads of healthy veggies like carrots,tomatoes, green capsicum and onions as well. The veggies are cooked and pureed and thus disguised making it a tasty option for kids otherwise averse to eating their vegetables. The credit for this recipe goes to my mom-in-law. Shrimp in Sweet Tangy Sauce

This wonderful recipe comes from our friend Amit who we met while in Boston. When I first tried this recipe I loved the sweetness from the shrimp and caramelized onions and what gives it a tangy flavor are the tomatoes and the red wine vinegar. I cook this when I have my American friends coming over, it’s light on the spice (though if you like you could add extra chilly). It’s a fairly simple recipe but is really tasty.
