Yay!! Today is my daughter’s birthday! We celebrated it over the weekend at a gymnastic club. The kids had an awesome time. My little one’s only request was for a two tier cake. Keeping with the theme colors, I made a 3 layer (8 inch) chocolate cake and topped it with a 2 layer (6 inch) vanilla cake. For the chocolate cake I used this recipe and this for the vanilla cakes. Both the cakes were made using Sweetapolita’s recipes and they turned out yummy! The ruffles were made using an Ateco 104 tip and with my favorite Swiss Meringue Buttercream ( 15 cups of it).
This was my first attempt at a two tier and I was mighty stressed. I watched this tutorial from YOUTUBE !
We had lots of yummy food at the party. I had ordered milkshakes and chicken tenders from my daughter’s favorite restaurant Burger 21! I prepared Mac N Cheese, egg salad sandwiches, cucumber and cream cheese sandwiches (at home). We also had a small dessert table set up with mixed berries, red velvet cake pops, Oreos dipped in chocolate, strawberries dipped in chocolate, cake and a medal cookie for each girl!
The bling sticks for the cake pops were ordered from Etsy!
I prepared the sandwiches an hour before the party. Lined the sheet pan with parchment paper. Then put some damp paper towels on top so they wouldn’t dry out and cling sealed it. It was easy to transport it too! Heated the Mac n cheese just before I left and put in a crock pot. Plugged it in as soon as we got to the party. I did carry a small milk bottle and salt because it thickens as it sits.
