I cannot believe summer vacation is over and it’s time to go back to school. This year, I volunteered to be on the PTA. My friend Erica and I are in charge of the hospitality committee. Every year, the week before school re-opens, the PTA throws a welcome back party for the teachers. We chose an “Apple” theme this time around and the last couple of weeks went by quickly with both of us busy planning and organizing the party. We are blessed with wonderful teachers at school and really wanted this to express our appreciation at this special event.
We catered from a gourmet, Italian restaurant and lunch included garlic knots, 2 types of salad, Chicken Marsala, Penne a la Vodka and Eggplant Parmesan. It was wonderful! For dessert, we served home-baked Orange-Raspberry Trifle, Red Velvet Cupcakes, Cake Pops, Tiramisu, Mini Blueberry Pies and Brownies. Each teacher received a “Teacher’s Survival Kit” (put together by Erica) and an apple-shaped sugar cookie (I baked about 80 cookies). The “nerdy” cookie design was taken from Sweetsugarbelle’s site and the bitten ones were inspired from Bekicookscakesblog.
I would also like to thank Lisa The Bearfoot Baker who sent me an apple template so I could top each cupcake with a royal icing apple transfer. Lisa has been extremely kind and generous and was quick to send me the templates so I could make them in time. She recently posted the apple royal icing transfers on her blog. Please check them out, they are stunning! Lisa has used the air brush technique and they look so real!

Kramer, for selflessly devoting her time and for making the PTA such a wonderful experience. We are so looking forward to the year ahead!
