Potato Soup With Sausage “Zuppa Toscano”

Zuppa Toscano Soup – Serves 6

After 3 straight dessert posts, it’s time for something a little more hearty and healthy. This recipe is for “Zuppa Toscano” soup made with Italian sausage, potatoes, onions, chicken broth, kale and a little cream. If the name “Zuppa Tuscano” sounds familiar it’s because you’ve probably seen it on the Olive Garden restaurant menu! Now that I’ve discovered the right recipe, I can finally enjoy this tasty soup anytime I like in the comfort of my home.

I came across the recipe at my local “Publix” supermarket as part of their “Publix Apron Simple Meal” program. The goal of the program is to highlight simple yet delicious recipes designed to make meal-time stress free for busy people. A small stall is set up inside the supermarket, stocked with printed copies of the recipe and all the requisite ingredients. An employee (wearing an apron) prepares the recipe on the spot and offers samples to the shoppers. I was particularly happy to see this soup featured the other day. When I saw how easy it was to put together, I grabbed the ingredients and made it as a comforting, one pot meal for the whole family to enjoy! I made a few changes to the original recipe.


  • 1 medium onion, thinly sliced
  • 4 medium sized Yukon Gold potatoes, thinly sliced
  • 3/4 pound Italian turkey sausage (3 links)
  • 2 (32-oz) box low sodium chicken broth
  • 1/2 teaspoon kosher salt
  • 3/4 teaspoon dried Italian seasoning
  • 4 cups chopped kale greens
  • 1/2 cup heavy cream
Slice the onions thin. Halve the potatoes and then slice thinly. Remove casings from sausage. Keep aside
Preheat a large stock pot or a Dutch oven on medium heat for 2 to 3 minutes. Place sausage in pan, brown 5 -7 minutes, stirring to crumble meat, or until no pink remains. 
Stir in onions, cook 1-2 minutes or until onions are softened.
Stir in potatoes, broth, salt, seasoning, and kale, and stir well.
Cover and cook for 20 minutes or until potatoes are tender. Puree soup lightly by using a stick blender or potato masher until smooth. Stir in cream and serve hot. Enjoy!
Note: I mashed the soup lightly using a potato masher, just to thicken it a bit.
While adding the seasoning, I rub it in between the palms of my hands to release their flavor.
