This summer I have been busy travelling. First it was India, to visit my family and this weekend we visited Chicago to attend a family friend’s wedding. It’s been hectic but a lot of fun. I have tons of photographs and stories to share with you’ll from my India trip. Will work on that for the upcoming post.
While in Mumbai, I managed to get in touch with blogger friend Khushboo who has a lovely blog http://kthadani.com/ that I follow. We were unable to meet up but it was so nice to speak to her.
Okra in cilantro sauce is a quick and delicious recipe that goes well with Indian bread. It is made with lots of fresh cilantro, tomatoes and green chillies. This is one of my favorite recipes for cooking okra. I hope you enjoy it!
Ingredients:
- 300 grams of okra- slit in the middle and the tops cut off
- 1/2 onion
- 2 green chillies
- 1 cup loosely packed cilantro- washed and cleaned
- 2 medium tomatoes
- 2 teaspoon coriander powder
- 2- 3 garlic cloves
- 1 teaspoon fresh ginger grated
- salt to taste
Method:
Grind onion, green chilies, cilantro, garlic, ginger and coriander powder. Add water to make a fine paste. Keep aside.
Grind the tomatoes and keep aside.
Heat oil in a vessel. Add the ground cilantro mixture and let it cook for 5 minutes on medium high heat. Add the tomatoes and fry this for 10 minutes.
Add okra, salt to taste and 1/2 cup boiling water. Cover and cook for 15 minutes till okra is cooked.
Serve hot with”Chappati”. Enjoy!

I’ve only ever eaten fried okra. This does look good though and I just adore cilantro. The fresh ginger sounds great too. Hope you enjoyed your time in India and Chicago (our home town!).

I loved Chicago so much so that I would love to move there.
I love okra and I even go to Indian market to get some (they always have okra while others store don’t have it sometimes!). I’ve never tried cooking okra with cilantro or any other ingredients listed. I wonder how it’s like – I’m curious.

This is really quite yummy!
I love simple and easy dishes like this that you can just whip up quickly. There’s a lot of garlic in there, compared to the others, I must try this as I love Indian style okra.

The very first time I saw okra was in Tennessee when I arrived there for university. Country folk called it “okry” and it was always dipped in corn meal and fried.

Asmita, I know how life gets so hectic if you have a good social life. I experience the same issue. Some times when I have to publish my post we have to go in the evening.I have started loving blogging and my friends wonder what is there in it?
Okra , I just love it. This is the best vegetable, fibrous and healthy and also quick to cook.

I just found your blog, and was intrigued by this recipe. I had okra at Indian restaurants before, but have never cooked it myself until now. I am/was a bit intimidated, but this recipe sounds really easy and doable. I guess I’ll have to go out, buy some okra and give this a try.
