Dill pulao is a simple and delicious rice dish made with fresh dill, tomatoes, ginger, garlic and chillies. It is very satisfying to have on its own or accompanied with Sai-bhaji which is generally how I like to serve it.
In western cooking, dill is added to yogurt or sour cream to make a dip, savory tarts and scones or a sprinkle of it on fish. Indian cooking uses dill as a main ingredient to make a vegetable like potatoes with dill, dill with lentils, or add it to rice to flavor it.
Dill has a wonderful aroma and your house is sure to smell great when you prepare this rice. Enjoy!
Ingredients:
- 1 1/2 cups rice
- 4 to 5 garlic cloves, finely chopped
- 3/4 teaspoon ginger, finely chopped
- 2 green chillies, finely chopped
- 1/2 cup fresh dill chopped finely
- 2 small tomatoes chopped fine
- 1/4 teaspoon turmeric
- 3/4 teaspoon coriander powder
- salt to taste
Heat oil in a vessel. Add the chopped ginger, garlic and green chillies. Fry this for a 30 seconds to a minute.
Add dill, tomato and fry for a few minutes.
Add rice, turmeric, coriander powder and salt to taste and mix well. Add 3 cups water and let it cook on medium high until the water evaporates. Cover and keep on low flame for 5 minutes until cooked.
This rice can be served with a refreshing cucumber raita, boondi raita or Sai-Bhaji.

Asmita, I have never thought of using dill other than as an extra ingredient when I make tzatziki. Thank you for opening my eyes and introducing me to other uses for dill as a main ingredient!

My mom often makes a vegetable only using dill and channa dal. It’s really delicious. Even added to potatoes taste yum!
