Strawberries are in plentiful these days and they’re one of our favorite fruits. This yummy dessert/snack only takes a couple to minutes to prepare. It’s a great last minute dessert to make at home for the unexpected guests and it looks so elegant! Chocolate-dipped strawberries can range from $12 to $19 a pound. At home, however, it’s under $5 (a pound) with extra strawberries to spare. Plus it’s fresh and you can use chocolate of your choice like white, milk or dark. I like to use Lindt white chocolate as we love it’s smooth, creamy and milky texture making it a perfect combination with the tart and sweet strawberries.
I use Ina Garten’s method of tempering the chocolate by microwaving it for 30 seconds, mixing with a rubber spatula and continuing to heat and stir in 30 second increments until the chocolate melts. It s important to stir the chocolate well which makes it shiny and glossy. Once it’s completely melted, add some more chopped chocolate to it and let the residual heat of the melted chocolate melt the additional chocolate.
Ingredients:
1 lb box of strawberries ( will need around 18 strawberries)
1 Lindt white chocolate bar ( 4.4 oz) chopped, use 3/4 bar to microwave and 1/4 of it to put in the melted chocolate when it comes out the microwave.
Method:
Line a sheet pan or plate with parchment paper.
Wash the strawberries well and dry. Make sure there is no water on the strawberry by wiping each one well.
Finely chop the chocolate and put 3/4 of it in a glass measuring cup or small bowl. Microwave for 30 seconds, take it out and stir with a rubber spatula. Do this procedure again till the chocolate melts. Stirring it vigorously is going to make the chocolate glossy and shiny.
After the chocolate has completely melted , quickly add the remaining chopped chocolate (1/4 ). Mix well till the chocolate melts.
Dip each strawberry in the chocolate mixture by gently holding the stem, hold to let the excess drip off and place on the sheet pan lined with parchment paper. After dipping all the strawberries, place them in the fridge. Ready to serve.
Note: If you like there will be some chocolate leftover in the bowl which will not be sufficient to fully coat the strawberry, you could put this chocolate mixture in a small ziploc bag, bring it to one corner and then using a scissor, make a small hole to pipe on the strawberry, making a zig zag pattern.
Melted a little milk chocolate to drizzle on the white chocolate dipped strawberries.
